Local couple will serve Hawaiian street food from Prevail Food Truck
.A Greeenville couple has been working for months creating a Hawaiian food truck concept and restoring a vintage fire truck to house it -- and they announced Friday that they're ready to launch it on Aug. 15.
Prevail Food Truck, owned by Chef Matthew Cole and his wife Shaina, will serve up Asian-influenced Hawaiian street food with an American twist at local breweries, festivals, weddings and catering events.

Matthew, who has worked in the food industry since he was 14, fell in love with the Hawaiian culture and cuisine when he worked as sous chef under James Beard Award winner and celebrity chef Roy Yamaguchi at Roy's in Naples, Fla.
Along the way, he earned a degree from the Culinary Institute of America in Hyde Park, N.Y. where he received the highly coveted Craig Claiborne Scholarship; worked at two five-star five diamond Relaix and Chateau properties -- The Woodlands Resort and Inn in Summerville, S.C., and The Little Nell in Aspen, Colo.; and served as a private chef for some A-List celebrities and prominent CEOs.
He began his food truck experience in Greenville S.C., operating a vintage 1953 Chevy wood-fired pizza food truck owned by Coastal Crust in Charleston, S.C.
Matt and Shaina relocated to Greenville last year and began working to combine their love of vintage vehicles and Hawaiian street food.
The couple has restored a 1946 Chevy Firetruck and created a kitchen on the back utilizing reclaimed wood from a schoolhouse built in Kinston in the late 1800s.
In a video on the Prevail Food Truck Facebook page, the Coles discussed how the project came together.
"I love what old vehicles stand for; life was a little bit simpler," Matt said. ... "It's living a second life. It's recycled, if you want to call it that."
"It was a water tank truck, so on the back there was a ton of water and you'd race to the fire and put it out," Shaina said. "Just to know our food truck is going to be racing to serve you is really cool."
The Prevail Food Truck menu is a whole new taste for eastern North Carolina.
"I wanted to do something different and unique, but approachable," Matt said in a video.
The food truck menu listed on their website includes: * Japanese Fried Chicken with Sake Syrup and Sriracha aioli; * Pork Loin Katsu with Hawaiian Tonkatsu Sauce; * Hawaiian Garlic Shrimp with Pineapple Salsa; * Shaved "Kalbi" Rib Eye beef with Sriracha aioli; * Togarashi Edamame; * Bulgogi Street Fries with mozzarella, kewpie mayo, Sriracha and cilantro; * Hawaiian Smashed Burger with local Angus beef, bacon jam, smoked Gouda, Sriracha aoili on brioche; * Gao Bao Pork Belly with sweet soy glaze, cilantro and Thai chili; * Crispy Pork Belly Banh Mi on a Vietnamese Baguette with homemade chili sauce and pickled herb salad; * Portuguese Empanada (hand pie) with Spanish Chorizo hash, Manchego fondue and Piquilloes; * Saimin-Hawaiian Ramen noodles in pork broth with scallion, 6-minute egg and pulled pork; * Hawaiian Style Poke Ahi Tuna with white rice, ginger mignonette, Asian slaw and pineapple salsa; and * Samoa Bao Nu (fried-fluffy Chinese bread sugared with caramel, chocolate, & coconut-macadamia crumb).
The food truck's name has a new relevance in 2020.
"We are going through this super hard time ... and Prevail food truck is here to inspire, hopefully, to make it through," Shaina said in a video.
